“When I left the White Hart in 2003, I moved the Monmouthshire Vegetarian Food Co to our new base at Vedw Farm. Here I have a purpose built kitchen, with a Welsh Food Hygiene Award and Food Safety Certificates, dedicated to creation of the dishes that both Rachel and I love, and to the discovery of new dishes. We previously only supplied our products to pubs, restaurants and other commercial outlets, but now I want to give everyone locally the opportunity to enjoy them too.”
